It is only day 6 and I am already sensing that staying healthy on a budget requires more planning and creativity than originally anticipated. My aim is to enjoy large amounts of raw and cooked vegetable dishes for about 150 dollars a month. I've been researching Once a Month Cooking or Freezer Cooking - and it looks like a great way to meet my goal. Ideally I would be cooking and freezing heavier dishes for 100 dollars a month so that I could reserve 50 for fresh fruits and vegetables. I've picked up "Frozen Assets" from the library and I'm scouring the net for tips. I plan on making my first attempt in a few weeks. In the meantime I plan on making great friends with my slow cooker.
